Polynesian Chicken Salad


I have never really been a big fan of chicken salad. However, a family friend introduced us to this recipe several years ago and I was blown away. I like to pair it with a buttery croissant for lunch or a light supper.

Polynesian Chicken Salad

2 cups cooked, chopped chicken
1 1/2 cups diced celery
1 1/2 cups diced canned pineapple or seedless grapes (or both)
1/2 cup toasted almonds
1/2 cup mayo
1/4 cup sour cream
1 tsp. curry powder
1 tsp. lemon juice
1/2 tsp. salt

Combine chicken, celery, pineapple, grapes, and almonds. Blend mayo with sour cream and seasonings. Pour over chicken and toss lightly. Chill.

YUM!!! This looks so yummy! Makes that salad & grilled cheese I just ate for lunch look pathetic. I am going to have to try this!

This is one of my favorite chicken salads ever! My mom always made it for me when I was younger, YUM!
