Sweet and salty and totally addictive...


Since many of you have the day off tomorrow and may be looking for something to do, I thought I would share this delicious recipe for cashew brittle. I love how it is perfectly crunchy, salty, and sweet.

Cashew Brittle

2 cups sugar
1/4 cup water
3/4 cup corn syrup
1 tsp salt
1 1/2 to 2 cups cashew halves and pieces
2 tsp baking soda

Mix first four ingredients together and let come to a boil. Cook until it reaches the hard crack stage. Stir in cashews. Add baking soda and beat until well mixed. Pour out onto a well greased pan (**I used a large cookie sheet.**). Once candy has cooled, break into large pieces. Then try to resist eating the entire batch in one day :)

Wow, that looks SO delish! I have had SUCH bad luck making candy...I would love to try this, but have this tiny feeling that I would ruin it! I like your gorgeous picture!
