gelato sammies

There's just something about ice cream sandwiches that screams "summer". While you can't go wrong with the classic version, I decided to put my own spin on this traditional summertime treat. The only problem is that they are totally addictive and I probably could have eaten 5 of them in one sitting.

Tips for making the perfect homemade gelato/ice cream sammie:
- Let the gelato/ice cream soften a little first so you don't break your cookie when making the sandwich
- Wrap assembled sandwich in wax paper and pop back into the freezer so the gelato/ice cream can firm back up. The time in the freezer also softens the cookies a bit so your sammie won't break into pieces when you go to eat it.

Thank you so much for posting this - ha ha! I'm so excited to try them. I'm all for a simple, delicious recipe. I always have such a hard time finding pistachio ice cream...I've never had the Ciao Bella variety, so I'll have to keep my eyes peeled for it!
